Pumpkin Muffins

 

 

Ingredients

½ Cup Vegetable Oil

½ Cup Un-Sweetened Apple Sauce

¼ Cup Sugar or Splenda

2 Eggs

1 Can Pumpkin

½ Cup Low Fat Ricotta Cheese

1 ½ Tsp. Baking Soda

Pinch of Sea Salt

1 Tsp. Cinnamon

1 Tsp. Nutmeg

1 Tsp. Ground Ginger

1 Tsp. Vanilla

1 1/2 Cups Ground Quaker Old Fashioned Oats

 

OPTIONAL: Add the following ingredients to equal 1 cup: coconut, raisins, nuts, dates, etc.

 

Directions

  1. Preheat oven to 350
  2. Have 24 muffin cup liners in place
  3. Add eggs, pumpkin and cheese
  4. Stir in baking soda, salt and other spices
  5. Add oatmeal
  6. Fold in goodies
  7. Pour into muffin cups
  8. Bake 19-20 minutes
