Cocoa Almond Muffins
Ingredients
1/4 Cup Vegetable Oil
1/3 Cup Splenda or 1/2 Cup Unsweetened Apple Sauce
2 Eggs
Mix the above ingredients together then add:
3 Bananas
1 Cup Low Fat Ricotta Cheese
1 Tsp. Vanilla
3 Heaping Tbsp. Cocoa Powder
2 Cups GROUND Quaker Old Fashioned Oats
Mix all the ingredients
Directions
1. Preheat oven to 350
2. Have 18 muffin cup liners in place
3. Pour the first 3/4 of the batter into each muffin cup
4. Add a spoon full of almond paste to the batter
5. Top with the final 1/4 of batter
6. Bake for 18 minutes
