Banana Muffins

Ingredients

1/2 Cup Vegetable Oil

1/3 Cup Splenda or 1/2 Cup Un-Sweetened Apple Sauce

2 Eggs

3 Bananas

3/4 Cup Low Fat Ricotta Cheese

1 1/2 Tsp. Baking Soda

Pinch of Sea Salt

1 Tsp. Vanilla

2 Cups GROUND Quaker Old Fashioned Oats

 

Mix the following ingredients to equal 1 cup: coconut, raisins, nuts & dates

 

Directions

1. Preheat oven to 350

2. Have 24 muffin cup liners in place

3. Combine oil & sugar. Whip until light and fluffy.

4. Add eggs, bananas and cheese.

5. Stir in baking soda, salt and vanilla.

6. Add oatmeal.

7. Fold in goodies.

8. Pour into muffin cups.

9. Bake 19-20 minutes.
